This is what happens when you visit Ree over at the Pioneer Woman website. You get an irrepressible urge to bake something obscenely decadent and delicious. If you haven’t been over there yet, I strongly encourage you to stop what you’re doing and head on over there (after you finish reading this, of course). Ree is a former city-girl-vegetarian who now lives on a ranch with meat-eating cowboys and the cutest bunch of kids. She shares stories of her life on the ranch, her passion for photography and most importantly, her love of cooking. She posts LOTS and LOTS of yummy recipes – you are really in for a treat! Which leads me back to these:
Today I made her Moist Pumpkin Spice Muffins with Cream Cheese Frosting. They were so incredibly easy, and the house smells divine! There were a few last minute substitutions: instead of greasing the pan, I used fall muffin tin liners, which I think the kids are going to love; also, Ree has you sprinkle cinnamon-sugar on top of the batter before sticking them in the oven, but I forgot, so instead, I sprinkled the frosting with the cinnamon sugar. I don’t think anyone will mind, do you?
I also left out the raisins, because those would so not fly in this house, but I did add a candy corn on top of each muffin, because who doesn’t like candy corn?
